It’s full-on Christmas cookie baking season, so I thought I’d pass along some of my favorite recipes.
Since we’ll be gone for most a good chunk of cookie eating, I’m only planning to make one kind this year. BECAUSE THEY ARE THE BEST. Also, making Christmas cookies is on our Advent activities list this week, and this recipe is so fun to make with kids.
My neighbor in Cincinnati introduced me to these sugar cookies, and they are SO GOOD. You could seriously just eat the dough and be happy. And then you bake them, and they make you happier than you even imagined. The subtle lemon and almond flavors put this dough over the top.
THEN, add this frosting technique and they become the coolest looking, most fun cookies you’ve ever made. In fact, my neighbor and I once spent a lovely evening decorating cookies and drinking wine. You don’t even need kids around to have fun making these cookies. Although, making these with kids is really fun, as evidenced by 3-year-old Wade giving his all while cutting out the cookies shapes. LOL.
They’re also great for giving away to neighbors, coworkers, etc…because they are just so cool.
Any other year, when I generally make more than one type of cookie, these are our other favorites:
Toasted Coconut Sables: This is a really easy slice and bake cookie to add to your repertoire. They’re not too sweet, and you can make the dough ahead of time and keep it in the freezer.
Peppermint Snowball Cookies: Seth’s (and Andria’s!) mom always made these when the were growing up and Seth requests them every year. My mom even made a batch and sent it to him last year, because she knows he loves them so much!
Pecan Pie Cookies: These are some of my favorite cookies from growing up. This recipe calls for store bought pie crust, which is GENIUS. You can also make your own, if you have a favorite recipe.
And, here are a couple cookie recipes I’ve run across this year that I’d like to try out.
Pistachio Thumbprints: I just started getting Bon Appetit and this recipe looks amazing. Seth is a big fan of anything pistachio, so this may be a winner.
Ginger Sandwich Cookies: I love ginger cookies. I love sandwich cookies. These look amazing.
