My kids love anything granola. Granola bars, obviously, if you recall my post about that, and also good old granola. We love to sprinkle it on top of yogurt or eat it plain.
Now that the kids are on summer break, I feel like food is literally flying out of my pantry. Time to break out my granola recipe to keep my troops from getting the “hangries” and also keep them from eating too much junk.
You guys, I must warn you…this stuff is like crack. It’s so good. I usually make a double batch so that we don’t blow through it in a day or two. So, here you go…you’re welcome.
Andria’s Granola Recipe
This is the recipe for the double batch. Go ahead and 1/2 it, if you want less.
Start with 6 cups of oats…
Add 1/2 cup of brown sugar. You can use light or dark.
Mix those two thoroughly, then begin on your wet mixture. For that, you start with 1/2 cup of honey…
Add 1/2 cup of coconut oil. I warm mine up first in the microwave, approximately 20 seconds, and pour it in the honey with a liquid measuring cup.
Next, I add 1 and 1/2 teaspoons of salt.
Combine those 3 ingredients with a whisk…
Pour wet mixture into dry mixture and stir…
At this point, I just halved the mixture and poured each half onto a baking sheet.
Spread out evenly and bake in a 250 degree oven, for 1 hour and 15 minutes, stirring every 15 minutes .
This is the fun part…choose whatever your heart desires to add to this granola. I chose toasted coconut, roasted almonds, dried cherries, and chocolate chips. (Let your granola cool completely before adding mix-in’s to prevent melting.) Another great combo would be pumpkin seeds, cranberries and toasted coconut. I’ll be trying that one in a couple of days when this batch has been devoured!
Store in an air-tight container and enjoy!
