My Go To Dinner Recipes for Busy Weeks

I try super hard to get real, non-processed food on the table most nights of the week. Of course, there are lots of times when I resort to cheese quesadillas and applesauce pouches for the boys (which they are more than happy to eat!) and who knows what for Seth and I…but I find if I have a plan, I’m generally able to make real meals. I also find myself going back to a handful of easy, delicious recipes over and over again. An added bonus – the boys actually eat these too! Score!

So, if you’ve got a busy week, maybe put one or two on your meal plan. You can thank me later.

Crock Pot Beef Carnitas

Throw the ingredients in the Crock Pot in the morning, and you’ve got at least a couple days of meals ready to go. I usually saute some peppers, cut up some avocado, and serve with tortillas, lime, feta cheese, and cilantro.  I double the spices, and this recipe also works well with chicken in place of the  beef.

Eggs in Purgatory

This is a super easy vegetarian meal. I make some pasta and scramble a couple eggs for the boys. This bread goes AWESOME with this stuff.

Chili Lime Drumsticks

These can also be grilled instead of baked, but I prefer them baked. I generally try to let them marinate for at least an hour before baking, but they’re good even if you don’t. Add a salad, maybe corn on the cob, and you’re set.

Greek Meatballs

I can throw these meatballs together in 20 min, and the boys eat them like they’re candy. Don’t use the sauce recipe in the link, but use the one here instead. I serve with pita bread, feta, and a simple Greek salad. These are delicious using either ground lamb or beef.

Salmon Cakes

Get yourself some canned wild salmon from Costco and this can be an easy recipe to make when you want to put off your grocery store run for one more day…so good and so easy. I always double the recipe and usually serve with roasted sweet potatoes and veggies. They’re also good dipped in Sriracha mayo dip (just stir together mayo and Sriracha to taste…) Leftovers are especially good with a fried egg on the top the next morning.
